  7. gas mark n. (also with capital initials) Brit. Cookery (with following numeral) a specific temperature setting on a standard scale used for measuring oven temperature.   

The precise temperatures can vary slightly, but broadly the scale rises in 25°F (approx. 14°C) increments from gas mark 1 at 275°F (approx. 135°C) to gas mark 9 at 475°F (approx. 246°C).
